It's not even that Snow Leopard was so great. It's that what came immediately after was so poor. Lion was noticeably janky. Things seemed to improve again with Mavericks becoming quite stable after numerous point releases. Then there was a glimmer of hope around High Sierra/Mojave/Catalina, but since then it's been steadily downhill.
