Surprised nobody's developed a custom rom for these things, since I've seen so many other random cheap android devices get custom roms on the xda site.

I don't see how that would work. Although there was adb access, they weren't rooted.

Note you can add a microusb USB hub, other USB devices including external storage, and Ethernet to most Fire TVs regardless.
