Theoretically, could/should we use these for signalling as well? Small strands of superconducting wire instead of fiberglass?

Sure it would work like copper wire minus the losses due to resistance.

Probably it would not make much sense to replace glass fiber because problems like (thermal) noise and cross contamination by other signals would still exist.
