For now, the only way is to always ask for the Desktop Site when I search. Unfortunately, iOS Safari doesn't allow me to set this per site and I have to do it manually every single time I search.

Use Firefox Mobile, Google hasn’t deployed AMP for that yet.

You can't really use a third party browser on iOS because Apple forces all links from their irreplaceable apps to open in Safari.
