It can take a week for symptoms to show. If someone were to follow this progression then I believe they would die due to having ingested it before seeing symptoms. Would following this kill you with poison ivy? Or would it give noticeable symptoms to make you stop before ingesting it?

No idea. Many plants will still kill you even with this protocol. Hence point number 1.
